Favorite Citrus Salmon

minutesWe eat fish at least one a week. This recipe I have shared with many friends and everyone raves about it. I love that the fish slow roasts on a bed of mixed citrus, fennel and a jalapeno. The flavors are delicious and the fish is light. My daughter who doesn’t care for salmon loves it this way and also grilled. You can’t go wrong and really you choose the citrus you like and if you don’t want the jalapeno then don’t use it. I serve this with steamed green beans and basmati rice.
Ingredients
1 medium fennel bulb, sliced thin
1 blood orange, sliced thin
1-2 Meyer lemons, sliced thin
1 jalapeno, seeded, and sliced thin
4 fresh dill sprigs
Kosher salt/Fresh ground pepper
1 – 2 pound skinless salmon fillet, center cut
3/4 cup olive oil
Flaky sea salt
Directions
- Preheat oven to 275. In a medium bowl, toss fennel, citrus slices, chile, and 4 dill sprigs. Season with salt and pepper. Pour out into a 3 quart baking dish. Place the fish on top of the citrus mix and season fisg with salt and pepper. Drizzle oil over fish and citrus mixture.
- Roast salmon until cooked through, 30-40 minutes for medium rare.
- Serve with rice and steamed green beans.
