minutesWe went to a family gathering and they served these and I am a huge fan of both fresh figs and bacon. One of my favorite pizzas in the world is at the restaurant, Figs, in Boston. They have a pizza that has figs, prosciutto, and Gorgonzola cheese. It is the perfect balance of sweet, savory and salty. It is amazing. These are easy to prepare and easy to cook and easy to eat. Even my kids gobble these up when they would never touch a fig. Bacon makes everything better. If you would rather use prosciutto, no problem and if you want to slip some cheese in there go for it. If you don’t want to grill then use your broiler.
Ingredients
8 fresh, ripe, plump, Mission figs
8 strips bacon
3 Tablespoons Balsamic Vinegar
2 Tablespoons olive oil
Gorgonzola or Stilton cheese, optional
8 toothpicks
Directions
- Gently rinse the figs. Dip a fig in the balsamic and then wrap in bacon, secure with toothpick. Then dip in olive oil before grilling or broiling. Repeat with remaining figs.
- If using cheese, make a small slit in the fig and gently stuff with a small amount, then follow the directions up above.
- Grill until the bacon crisps up about 10 minutes or broil until the bacon crisps up about 5-8 minutes.
- These work wonders as appetizers or for dessert, drizzled with fresh honey and a glass of port.
