Best Overnight Waffles Ever

minutesOne of my dearest friends shared this recipe with me and all I can say is WINNER!!! This is so easy to do and you can make them the night before. Brilliant. I have made overnight waffles before and they are good BUT this is the BEST!!! I love that it is easy and you can make it 1-2 days before. These waffles are delicious and taste perfect with whatever your favorite topping is: syrup, powdered sugar, whipped cream, creme friache, or jam. I serve these with mixed berries and wonderful syrup from Runamok Syrup Company. Make these for friends and family, everyone will want more so double it.
Ingredients
1/4 cup warm water
2 teaspoons active dry yeast
1 Tablespoon sugar
1 1/4 cups milk, scalded, cooled slightly
2 lg eggs, beaten
4 Tablespoons butter, melted
1 teaspoon salt
1 1/2 cups flour
Directions
- Place warm water and yeast in a large mixing bowl and set aside for 5 minutes, until the yeast becomes bubbly and almost creamy like.Stir in the sugar, milk, eggs, butter, and salt. Mix well and then add the flour, stirring until batter is creamy. Cover loosely with wax paper and a tea towel and let sit at room temperature for 2 hours. Stir the batter, which should be bubbly at this point, cover tightly with plastic wrap and refrigerate overnight, at least 12 hours or up to 2 days before cooking.
- Prepare your waffle iron and when hot spray or brush with oil, pour batter and cook until the indicator timer goes off. Serve hot with syrup.
- Leftovers can be frozen up to 1 month. To reheat, toast and serve with jam or cut vertically and dip in syrup.
