Peanut Sauce Noodles

minutesThis is one of my kid’s favorite recipes. They love this and if I want to add more protein I add chicken or shrimp which they both love. This recipe is delicious both hot and cold. I use all kinds of pasta from whole wheat noodles, rice noodles, soba noodles and regular spaghetti.
Ingredients
1 lb pasta or rice noodles
1/2 cup creamy peanut butter, not natural
2 Tablespoons soy sauce
1 1/2 Tablespoons rice wine vinegar
1-2 teaspoons chile pasta with garlic
1/2 teaspoon sugar
1 red pepper, cut into thin strips
3/4 of a cucumber, seeded
3 green onions, minced
Cilantro and lime wedges
Directions
- Cook the pasta according to the directions.
- Combine peanut butter, 1/4 cup water, soy sauce, vinegar, chile paste and sugar in a large bowl and whisk well to blend. Add more water if to thick, it should be the consistency of heavy cream. Add the cooked pasta, red peppers and chopped cucumber. Toss well and serve.
- Garnish with cilantro, lime juice, and finishing salt.
