Tagliatelle with Tuna

minutesWe love pasta in this house. It is so easy to make for a quick, healthy and filling meal. It is a perfect meal as pasta goes with everything. Just pasta with olive oil, finishing salt and fresh grated parmesan cheese. We will sauté or roast vegetables and toss with olive oil and cheese and pasta. I love this recipe as it is light and tastes of the sea. Make sure to use Italian tuna in water in fine but in oil the flavor is much better. Lots of lemon here-No Cheese.
Ingredients
1 lb tagliatelle or flavored noodles
1 jar of Italian tuna in oil
1 lemon, zest and lemon juice
4 Tablespoons olive oil
1/4 cup fresh Parsley, chopped
Red pepper flakes
Salt and fresh ground pepper
Directions
- Bring a pot of water to boil and salt water before adding the pasta. Cook according to instructions on box.
- In a saucepan, add the 2 Tablespoons olive oil and lemon juice over medium heat. Add red pepper flakes if using and parsley. Add the tune and heat so it is warm not cooking really. Season with salt and pepper.
- Cook pasta till al dente and then drain and mix into the tuna. Add remaining 2 Tablespoons oil and zest. Make sure everything is combined. Add a few grinds of fresh pepper and a sprinkle of finishing salt.
- Serve in heat bowls with a garnish of more fresh chopped parsley.
