Nutella Madeleines

minutesI love this cookbook by Pippa Middleton. It is such a fun book and all the recipes are just delicious and so festive. It is my go to for fun, festive ideas and recipes. These are a hit as my children love Nutella. I have these on hand regularly and have even played with the recipe to add to the flavor. They are so good and very light. ****The cookies will freeze for 1 month in an air tight container.
If you want to make these plain, leave out the cocoa, increase the self rising flour by 3/4 cup. Add finely grated lemon or lime, about 1/2 teaspoon and bake as directed. Dust with powdered sugar before serving.
Ingredients
5 Tablespoons unsalted butter, melted and cooled slightly
6 Tablespoons super fine sugar
3 eggs
1 teaspoon vanilla
1/2 cup self rising flour
2 Tablespoons good quality baking cocoa
- Topping
1/2 cup Nutella
1/2 powdered sugar
1/4 cup hazelnuts, toasted and chopped
Directions
- Preheat oven to 350. Spray with baking spray very well two madeleine pans.
- Place sugar, eggs, and vanilla in a large bowl and whisk together for 5 minutes until pale. Carefully sift in the self rising flour and cocoa powder over the mixture. Fold in gently with a large metal spoon. Pour the melted butter down the edge of the bowl and fold it in quickly and gently.
- Spoon 1 Tablespoon of the mix into each well in the pans. Bake 10 minutes. Remove from oven and transfer to a rack to cool completely.
- Topping
- Mix together the Nutella, powdered sugar, and a touch of hot water to loosen the mixture slightly. Spread over the tops of the madeleines, sprinkle with chopped hazelnuts over the top and serve.
