Vegetarian Roast Meal with Beans and Rice

minutesFor those nights when you want to eat lighter this is rather easy. Select the vegetables you want to roast, steam or saute or all three and then pick your favorite grain or and bean. You can use any grain from rice to couscous to farro. As far as beans go use what you enjoy or use lentils. Really this is up to you and what you want to use. You can also add flavors to make it more Italian, Asian, Indian, or whatever you enjoy.
Ingredients
3 bell peppers, tops cut off and seeded. Sliced thin
1 bunch of asparagus, bottoms trimmed
1 head broccoli, florets trimmed off
1-2 sweet potatoes, cubed
3 small bunches baby bok choy
2 Tablespoons olive oil
Rice or grain of choice cooked to package instructions
Lentils or beans of choice
Directions
- Preheat oven to 400. Line a rimmed baking sheet with parchment and toss all the vegetables except bok choy in a bowl with olive oil and seasoning.
- Pour out onto the prepared pan and roast for 30-45 minutes.
- In a oan on the stove, heat 1 tablespoon olive oil and saute the bok chop. Season with your favorite seasoning.
- Cook the grains and beans until ready.
- Place the cooked grains in a serving dish with the beans/lentils served around the rice. Top with roasted vegetables and sautéed bok choy. Season with salt and pepper and a drizzle of olive oil.
