Pork Lettuce Cups

minutesMy kids love these. To be honest, this is one of my favorites when we go out for Chinese food. I always order the chicken cups. This recipe works great with ground chicken or ground turkey. I serve it with brown rice and saute of vegetables. This never disappoints. The only thing I will add is if you have big eaters, double the recipe.
Ingredients
2 Tablespoons soy sauce
1 1/2 Tablespoon fish sauce
1 Tablespoon fresh squeezed lime juice
1 Tablespoon brown sugar
2 Tablespoons sesame oil or avocado oil
1 lb ground pork
1 medium shallot, thinly sliced
1/2 cup dry roasted peanuts, chopped and divided
2 Tablespoons fresh mint and fresh cilantro
8 large bibb lettuce leaves: cleaned
Directions
- Whisk soy sauce, fish sauce, and lime juice together. Add the sugar and continue to whisk until dissolved.
- Heat oil in a lg skillet or wok over med high. Add the pork and break it up, cook undisturbed until starting to brown, about 2 minutes. Add the shallot, cook stirring into pork to break it up. Stir until pork is browned and almost cooked through. The shallot should be starting to soften about 2 minutes.
- Add the soy sauce mixture and cook stirring until liquid is absorbed and pork is cooked through. Stir in 1/4 cup peanuts and 1 tablespoon fresh herbs.
- Serve pork in the lettuce leaf with a sprinkling of peanuts and fresh herbs. Finish off with a fresh squeeze of lime.
