minutesI love stir fries. What to do with an abundance of vegetables? Stir fries are easy, healthy and one pot cooking. Plus, you can always add any protein from any kind of meat, fish or even tofu or tempeh. My kids love stir fries and sometimes we serve with jasmine rice or noodles. These are easy to do and you can choose any flavor profile whether you choose to make it more Italian with fresh herbs such as basil, sage, parsley and oregano or Asian using cilantro, lemongrass, basil, and fresh ginger.
I never use a recipe, I just go with what I have access to as far as vegetables. My garden always has a bounty of fresh herbs. We keep fresh herbs year round in our garden so they go to make all my dishes savory or sweet much better.
Ingredients
Variety of sweet peppers
Variety of eggplant
Variety of summer squash
Variety of mushrooms
Variety of onions
Variety of greens: bok choy, cabbage, arugula, or kale
Variety of tomatoes
Add liquid/flavor marinade : lime juice, olive oil, soy sauce or citrus or chicken broth
Directions
- Cut, chop, dice, slice, vegetables. If cherry tomatoes are large, slice in half.
- Using a wok or large sauté pan, heat olive oil or any oil of your choice, add the onions and sautéed for 5 minutes. Add the peppers and eggplant, sauté for 5-8 minutes until beginning to break down. Add the mushrooms and tomatoes.
- Add liquid/seasoning and stir until vegetables are ready about 5-8 minutes.
- If making rice, make it ahead of time according to package directions or noodles follow package directions.
- Serve stir fry over rice or noodles and garnish with fresh herbs or soy sauce.
