Chocolate Thumbprint Cookies: Valentine Themed

minutesI made these for my daughter’s Valentine’s Day party. She loves my peanut butter thumbprint cookies so we decided to do chocolate. These were easy to make but just require some time to chill before baking. Allow yourself a few hours. I made these and rolled them in sugar then placed them on the prepared baking sheet. I popped them in the frig for 3 hours then came back and baked them as they came out of the oven my daughter stood ready to pop each kiss into each cookie. I then sprinkled them with Valentine sprinkles but these could easily work for any holiday. I doubled this recipe the two times I did it as it made enough for my daughter’s class and for family and friends. The measurements below are NOT doubled. It was very easy to double.
Ingredients
1 1/2 cups flour
1/2 cup unsweetened natural cocoa powder ( I used Droste)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup brown sugar, packed
2/3 cup sugar, divided
1 lg egg, room temperature
1 teaspoon vanilla
1/2 teaspoon peppermint (i did not use but would be good at Christmas)
2 teaspoons milk
50 Hershey’s Kisses
Sprinkles of choice
Directions
- Prepare three baking sheets with parchment paper and set aside. In a bowl, whisk flour, cocoa powder, baking soda, and salt together. Set aside.
- In a large bowl, using a handheld mixer beat butter, brown sugar and 1/3 cup sugar together on medium high until smooth about 2 minutes. Add the egg and vanilla and beat on high until combined. Scrape sides of bowl down and slowly add the dry ingredients. Then add in the milk and mix on low until combined. Dough will be thick.
- Using a spoon, scoop a small amount of dough and roll into the remaining 1/3 sugar. Place rolled dough on prepared pan. Repeat with remaining dough. Gently push down on each dough ball. Place in the refrigerator for up to 3 hours or cover and can do overnight.
- Preheat oven to 350. Distribute the cookies on the 3 cookies sheets and place in oven for 12-14 minutes. The cookies edges will be set and they will feel a tad soft. remove from oven and place a Hershey’s Kiss in the center of each one. Using your favorite sparkling sprinkle, sprinkle away to turn them fun and festive.
