Slow Cooker Pork Shoulder with Zesty Sauce

minutesI love this recipe. It is a family favorite and one I make often. I am not a huge fan of the Slow Cooker but the recipes I have on my blog are great. The flavor in this and the sauce make it worthy enough to serve for a dinner party. This dish is always a hit and I like to serve it with couscous or steamed potatoes as they soak up the flavorful sauce. Sautéed Swiss Chard goes nicely or roasted green beans. My kids beg for this. I always marinate the pork the day or two before. I make the marinade and rub it all over. I have also made this a day before and then reheated it. It also makes wonderful sandwiches with some grainy mustard, crunchy lettuce and tomatoes. If you have extra sauce, it goes great with roasted chicken or fish.
Pork
4 cloves garlic
2-3 Tablespoons olive oil
2 Tablespoons whole grain mustard
1 1/2 Tablespoons brown sugar
1 Tablespoon Kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon fresh oregano, chopped
1 teaspoon smoked paprika
1 skinless, boneless pork shoulder, tied, about 3 1/2-4lbs
- Sauce
1 large shallot, finely chopped
2 cups basil leaves, finely chopped
1/2-3/4 cup olive oil
1/4 cup oregano leaves, finely chopped
1/2 teaspoon red pepper flakes
1 teaspoon Kosher salt
1/3-1/2 cup fresh lemon juice
Directions
- For the pork, mix together in a bowl: garlic, oil, mustard, brown sugar, salt, pepper, oregano, and paprika. Once mixed, place the pork in a plastic bag or in the insert (if it is removable) and rub the marinade all over the pork. Refrigerate up to 2 days.
- Place the pork in the slow cooker and place the insert with the pork in the slow cooker and cook on LOW for 5 1/2-6 hours. It can warm for an additional hour.
- When the pork is tender, remove to a cutting board and allow to rest 5 minutes. Slice the pork and serve with the sauce.
- Sauce
- In a jar, mix the shallot, basil, oil, oregano, red pepper flakes, and salt. Place a tight fitting lid and give a good shake. The sauce can be mad a day ahead to this point.
- Next add the lemon juice and give a good shake. Season to taste and serve on top of the pork.
