Ginger Garlic Chicken and Vegetables Stir Fry

minutesI love a good stir fry and this has all the right ingredients and flavor. My family also enjoys stir fry’s. They are easy to make, get your favorite protein and add your favorite vegetables. The flavor in this stir fry is great with the garlic and ginger as well as the green onions and cilantro. This is easy to prepare and serve with your favorite rice, I prefer jasmine rice.
Ingredients
1 1/2 lb boneless, skinless chicken breasts, cut into small bite size pieces
5 Tablespoons soy sauce, DIVIDED
2 Tablespoons Mirin, DIVIDED
1 Tablespoon cornstarch
4 scallions, white and green parts
6 garlic gloves, chopped
1 2inch piece of fresh ginger, outer skin removed and chopped
4 Tablespoons avocado oil
8 oz Baby Bok Choy, halved lengthwise
8 oz sugar snap peas, trimmed
1 red bell pepper, stemmed, sliced thinly
1 bunch cilantro, rinsed and chopped
Salted peanuts or cashews, chopped
Directions
- Toss chicken with 2 tablespoons soy sauce and 1 tablespoon Mirin in a medium bowl. Sprinkle the cornstarch over and toss to coat.
- Pulse scallions, garlic and ginger in a food processor until finely chopped.
- Heat 2 Tablespoons oil in a large skillet over medium high heat. Place the chicken in the pan in a single layer so it cooks evenly. Allow to cook undisturbed for 3 minutes. Turn chicken over and cook until golden brown, about 2 more minutes. Transfer to a plate.
- Heat remaining 2 Tablespoons oil in the pan, add scallion mixture and stirring until fragrant about 30 seconds. Add bok choy, red pepper and snap peas, cook stirring until tender. Add the chicken back to the pan with any accumulated juices. Add remaining 3 tablespoons soy sauce and 1 Tablespoon Mirin with 1/4 cup water, scraping up any bits on the bottom of the pan.
- Cook, stirring so everything combines and sauce thickens about 2 minutes. Remove from heat, season to taste.
- Serve in heated bowls over rice and garnish with fresh cilantro and salted peanuts or cashews.
