Chocolate Chip Whoopie Pies with Cream Cheese Frosting

minutesMy kids have been fans of Whoopie pies forever and thanks to the best whoopee pie cookbook, “Whoopie Pies by Billingsley and Treadwell. All the recipes are amazing and they are easy to follow. My kid’s begged for me to make these again so I tried chocolate chip because in the past I have made chocolate pies.
Ingredients
2 1/4 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoons salt
4 Tablespoons butter, room temperature
4 Tablespoons solid vegetable shortening
1/2 cup sugar
1/2 cup brown sugar
2 lg eggs
1/2 cup buttermilk
1 teaspoon milk
1 teaspoon baking soda
1 teaspoon white vinegar
1/2 teaspoon vanilla
1 cup mini chocolate chips
- Cream Cheese Frosting
4 oz cream cheese, room temperatures
4 oz butter, room temperature
3 1/2 cups (16oz) powdered sugar
1 teaspoon vanilla
2 Tablespoons milk or more if to thick
Add food coloring for festive flair or roll in sprinkles
Directions
- Preheat oven to 375. Prepare whoopie pie pans with baking spray.
- Sift together flour, baking powder, and salt onto a sheet of wax paper.
- In a bowl of a stand mixer fitted with a paddle attachment, beat together the butter and solid vegetable shortening. Beat until creamy and combined. Add the sugars and once everything is creamed. Add the eggs and the buttermilk and beat until combined.
- In a measuring cup, combine milk, baking soda, and vinegar. Add the milk mixture to the batter along with the flour mixture on low until just combined. Add the vanilla and beat on medium for 2 minutes, until completely combined.
- Using a wooden spoon, stir in the min chips.
- Using a spoon, drop about 1 tablespoon of the batter into each well of the prepared pan. Hit the pan against the counter to assist in spreading out and so they cook evenly.
- Cook for 10 minutes and remove from oven. Allow to cool in pan for 5 minutes then remove and allow to cool completely on parchment.
- Frosting
- Using a hand mixer or a stand mixer with a paddle attachment, beat butter and cream cheese together. Add the vanilla and then slowly add the powdered sugar. If the frosting is to thick, add the milk, a little at time till you get the consistency is what you want.
