Fava Beans and Shitake Spring Saute

minutesI love this for the ease of throwing together. I get my kid’s to do the hard part with the fava beans. Once they are out of both pods and outer skins, they are good to go. I like using a combo of olive oil and salted butter to bring out the natural flavors of the mushrooms. Sometimes I also add fresh English peas (shucked out of their pods) and serve it with fresh grated lemon zest or Parmesan cheese.
Ingredients
2 lb fava beans, removed from pods and outer shell.
2 lb shiitake mushrooms, cleaned and stemmed, cut in thirds
2 Tablespoons olive oil
2 Tablespoons salted butter
Seasoning of choice: garlic powder, aleppo pepper or and mixed herbs
Directions
- In a lg saute pan heat oil and melt butter. Add the mushrooms and cook until beginning to release the liquid. Once the mushrooms become tender add the fava beans and saute together. Add the seasoning of choice and finish with a garnish of fresh herbs.
