Guava Panetelas

minutesSo one of my best friends loves guava’s and all things guava. My grandmother was the same and made guava jelly for all her friends every year. I would even get a bunch sent to me while in boarding school and college. It was so good and even better when used to complement a savory cheese or even serves with cream cheese and hearty crackers. I found this recipe and made it for my friend and she raved. The guava came from Amazon.
Ingredients
2 cups flour
1 Tablespoon baking powder
1/2 teaspoon sea salt
1 stick butter, room temp
1 cup sugar
2 eggs
3/4 teaspoon vanilla
1/4 teaspoon almond
Guava paste, cut into slim strips about 1/8 inch thick
Powdered sugar for dusting before serving
Directions
- Preheat oven to 350. Spray and use parchment in an 8×8 square pan.
- On a piece of wax paper, sift together flour, baking powder and 1/2 teaspoon salt.
- Add the butter and sugar in a lg bowl and using a hand mixer, beat together. On slow speed add the eggs, one at a time, followed by the vanilla extract and almond extract.
- Add the flour mixture and do not over beat.
- Using a lg spoon, spoon the 1/2 the batter in the prepared pan. Using a gloved hand, sprayed with baking spray, spread out the batter evenly. Lay the guava pasta, close to each other but not touching. Using the rest of the batter, repeat with gloved hand and baking spray. Cover the guava paste and smooth the top.
- Bake in the oven for 20-25 minutes until lightly golden in the middle and on the edges.
- Remove from oven and allow to cool for 10 minutes. Being very careful remove from pan and flip onto a serving platter and dust with powdered sugar.
- This is best eaten the day it is made. Store in an air tight container. After the 2d day, reheat in the microwave on the lowest setting to make it taste more fresh.
