Tomato, Fresh Herbs, and Mozzarella Salad

minutesI always love summer!!! Cooking and making delicious meals is so much easier when you have access to so much in season produce. Tomatoes are a favorite and I have so many tomato salads in my arsenal. I made this one the other night in my ranch kitchen for friends who happened to stop by. It was a hot night and I went to my garden to pick fresh basil, thyme, and chives. I had the mini mozzarella balls as my daughter is a big fan. I had 2 pints of mixed cherry toms as well as a few Roma toms. I halved the cherry tomatoes and quartered/halved the Roma tomatoes. I placed them in a bowl with the cheese and freshly chopped herbs. I tossed, seasoned and drizzled a little olive oil and Balsamic. The salad was excellent and even better the next day.
Ingredients
2 pints mixed cherry toms, halved
4-6 Roma toms, quartered and halved
A lg handful of herbs of choice: basil, thyme, parsley, cilantro, chives, or/and tarragon.
Salt and fresh ground pepper
Extra Virgin Olive oil
Balsamic Vinegar
Directions
- Place the prepared toms in a large bowl. Sprinkle with fresh herbs, salt and pepper. Toss with either olive oil or Balsamic or both.
- Garnish with more fresh herb leaves and Finishing salt.
