Brown Sugar Oatmeal Pancakes

minutesThese are so good. My kids love a hot, homemade breakfast every morning but especially before school. I double the recipe so I can freeze them and they can reheat when they want them. Enjoy these and I make them with whole wheat flour and Bob’s Red Mill oatmeal so I feel they are healthy. They also are wonderful as a grab and go breakfast. My son swims early in the am so he will get up, heat one up and slather peanut butter for a great protein rich snack before a work out.
Ingredients
2/3 cup rolled oats
1 cup whole wheat flour or all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup dark brown sugar
1 lg egg
2 Tablespoons coconut oil, melted
1 cup buttermilk
Directions
- In a lg bowl, whisk together dry ingredients. In a small er bowl, whisk together egg, coconut oil, and buttermilk. Add the wet ingredients to the dry and mix until just moistened.
- Pour about 1/3 cup batter onto a greased grilled on buttered non stick pan and cook over medium heat. Cook until the top of each pancake bubbles then flip and cook until golden brown.
- Serve with syrup or a light dusting of powdered sugar.
