Ground Turkey, Shiitake and Cashew Lettuce Cups

minutesThis is one of our favorite dishes from our local Chinese restaurant. These are so good and great flavor. These make a delicious light dinner with the ground turkey. I have made these ground pork and that tastes so good as well. The pork has a bit more fat which adds to more flavor. I also added some fresh ginger to these which added a deeper taste.
Ingredients
3 tablespoons Shaoxing wine or dry sherry
1 Tablespoon oyster sauce
2 teaspoons soy sauce, plus more for flavor
1/2 teaspoon white pepper
2 Tablespoons avocado oil
1 lb ground turkey or pork or a combination
4 oz fresh shiitake mushrooms, stems removed and chopped
3 scallions, thinly sliced
2 celery stalks, diced
2 Tablespoons roughly chopped cashews
Cold, crisp lettuce leaves such as Bibb lettuce or iceberg
Hoisin sauce
Directions
- Whisk wine, oyster sauce, soy sauce and white pepper together in a small bowl. Set aside.
- Heat oil in a skillet over medium high and when just beginning to smoke add the ground turkey and using a spatula, break up the meat so to cook evenly. Let cook until the bottom of the meat is deeply browned about 4 to 5 minutes. Then stir to break it up and cook evenly.
- Stir in mushrooms and scallions, cook stirring and scraping the bottom of the pan until mushrooms are glistening and scallions are tender, about 2 minutes.
- Stir in reserved sauce, cashews, celery, and cook until everything is warmed through. Immediately remove from heat and season with more soy sauce and white pepper if needed.
- To serve, transfer to a serving bowl and separate the lettuce leaves. Serve a scoop of the turkey mixture in the lettuce and a spoonful of hoisin sauce.
