Roasted Salmon with Citrus Herb Salsa

minutesThis recipe is light and beautiful. It is healthy and we all enjoyed it. I have made the Citrus Salsa Verde alone to use with shrimp or pork. It is delicious.You can’t go wrong.
Ingredients
2 shallots, very thinly sliced
Finely grated fresh zest from 1 orange, divided
Finely grated fresh lemon zest, divided
1 Tablespoon plus 1/2 cup evoo
1 lb salmon fillet
Kosher Salt
1/2 cup fresh chopped cilantro
1/2 cup chopped parsley
1 small garlic clove, grated
1/2 teaspoon smoked paprika
Juice from 1 orange
Juice fom 1 lemon
Directions
- Preheat oven to 250. Combine half the shallots, half the orange zest, half the lemon zest, and 1 Tablespoon oil in a small baking dish just large enough to fit the fish.
- Season fish with salt and coat with zest mixture. Bake the fish until opaque in the center and a flakes when pierced with fork, about 25-30 minutes.
- Meanwhile mix the cilantro, parsley, garlic, paprika, remaining zests, and 1/2 cup oil in a medium bowl. Stir in the orange and lemon juice and season it with salt. Serve fish and spoon salsa verde
