Quick Peach Bread

minutesI had two peaches that were not in great shape and I didn’t have a lot of time so I found this recipe and my kids got home from school and the only thing left were an empty pan and lots of crumbs. They loved it. I was able to have a large crumb and it is very good. I made it with whole wheat flour and it was great. I did add some spices because I felt that is what it needed or it would have been bland. I added cinnamon and ginger.
Ingredients
3/4 cup sugar
1/2 cup whole milk
1/2 cup canola oil
1 lg egg
1 1/2 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
2 cups fresh and ripe peaches, diced (2-3 peaches)
Vanilla sugar or Raw sugar
Directions
- Preheat over to 350. Grease a bread pan, 9×5.
- In a lg bowl, stir together sugar, milk, oil, egg and vanilla.
- In a separate bowl or on a piece of wax paper, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients.
- Fold the peaches into the batter and pour the batter into a prepared pan.
- Bake about 50 minutes and keep watching. The top may get a little golden before the bread is finished. Allow the bread to cool in pan for about 10-15 minutes. Remove to a platter or to the wax paper and allow to rest.
- Store bread in an air tight container in the refrigerator.
