Fresh Strawberry Cake with Strawberry Frosting

minutesThis cake is so good and so moist. I made this for our school’s principal because his favorite dessert is strawberry shortcake but that is challenging to make for many people so I found this but have made it so many times that I have tweaked it and made it my own. This cake is amazing and perfect for Spring, Summer or Fall. Use fresh strawberries, frozen do not work for this recipe. I also add some of the jam to the frosting which adds a pretty color. The frosting makes quite a bit so sometimes I make the cake in 2, 8×8 pans and then have plenty of frosting. The frosting also works with a chocolate cake.
Cake:
2 1/4 cups self rising flour
2/3 cup sugar
2/3 cup buttermilk
1/2 cup strawberry preserves
1/2 cup unsalted butter, melted
3 lg eggs
1 teaspoon vanilla
2/3 cup chopped fresh strawberries
8 whole strawberries for decoration
- Frosting
1 (8oz) cream cheese, softened
1/2 cup butter, softened (1 stick)
2 Tablespoons strawberry preserves
1 cup fresh strawberries, chopped
4 1/2 cups powdered sugar
Directions
- Preheat oven to 350. Spray a 9x13x2 baking pan with baking spray with flour.
- In a lg bowl, whisk together flour and sugar and make a well in the middle.
- In a medium bowl, whisk together buttermilk, preserves, melted butter, eggs, and vanilla. Add the buttermilk mixture to flour mixture, whisking to combine. Stir in strawberries. Pour batter into prepared pan.
- Bake until a wooden toothpick comes out clean about 25-27 minutes. Let cool completely a wire rack. Spread strawberry cream cheese frosting on cake and decorate with whole and sliced strawberries.
- Frosting
- In a bowl of a stand mixer with a paddle attachment or with a hand mixer, beat butter and cream cheese till well incorporated. Add preserves and mix until well blended. Add the strawberries and beat until well combined. Turn mixer to low and add the powdered sugar, a little at a time.
- Once well blended and the right consistency, spread the frosting on the cake and decorate with sliced and whole fresh strawberries.
- Refrigerate cake till ready to serve, allow to come to room temperature before serving. Cake can be kept in an air tight container for up to 3 days in a refrigerator.
