Apple Caramel Cake

minutesThis was easy to make and quite delicious. My kids love desserts that can also be good for breakfast. This works both ways. Serve it in the am with some yogurt and berries or as an afterschool snack. It makes the house smell wonderful.
Ingredients
1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 kosher salt
1 stick of butter, divided
1 teaspoon vanilla
1/2 cup sugar
1 cup light packed brown sugar, divided
2 lg eggs
3 lg Granny Smith Apples, grated on a box grater
1/4 cup heavy cream
Directions
- Preheat oven to 350. Line an 8×8 pan with parchment paper. Whisk all the dry ingredients together in a medium bowl.
- Melt 5 Tablespoons of the butter in a pan, pour the melted butter into a lg bowl and reserve the pan. Add the vanilla, sugar, and 1/2 cup brown sugar to the bowl with the butter and whisk to combine. Add the eggs, and whisk again. Add the dry ingredients and whisk until combined. Add the grated apples and whisk until the apples are evenly distributed through the batter. Scrape the batter into prepared pan and smooth the top.
- Bake in the oven for 30-35 minutes, until tester inserted into the middle comes out clean. Let the cake cool in the pan and then remove to a wire rack.
- Just before serving, melt remaining 2 Tablespoons and 2 teaspoons butter in reserved pan. Cook stirring constantly, until milk solids are a deep brown, about 2-3 minutes. Add the cream, pinch of Kosher salt and remaining 1/2 cup brown sugar, stirring constantly, bring to a boil, and cook until slightly thickened and sugar has melted, an instant read thermometer reads 225, about 1-2 minutes. Remove from heat and allow glaze to cook about 5 minutes.
- Place cake on a serving dish, flipped over, peel off parchment and pour glaze over cake. Allow to sit for 5 minutes before cutting the cake.
