Asparagus Tomato Salad

minutesThis salad is a staple at most of our BBQ’s. It has 3 favorite vegetables: asparagus, tomatoes, and avocados. It tastes like summer. It goes perfectly with grilled trip tip, burgers, chicken or/and lamb. If you don’t care for the Gorgonzola, you can add goat cheese or something you prefer.
Ingredients
1 lb. asparagus, trimmed and halved on the diagonal
6 cups cherry tomatoes in various colors
1/2 cup crumbled Gorgonzola cheese
1 ripe avocado, cut into cubes
1 cup sliced basil leaves or and dill
1/4 cup extra virgin olive oil
2 teaspoons lemon juice
2 teaspoons dijon mustard
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
1 teaspoon malton salt
Directions
- Boil asparagus in a large pot of salted water for 2 minutes. Drain and rinse with cold water.
- In a large bowl, toss asparagus with the remaining ingredients and coat everything in the dressings.
- Pour the salad into a pretty serving dish and garnish with fresh herbs and Walton salt.
