Banana Buttermilk Cake

minutesThis cake is wonderful. You can eat it for breakfast with a side of berries or for afternoon tea or dessert. It has great flavor and is wonderfully light and moist. I love the addition of the Cardamon. I would add more so that it isn’t just a trace but that you get a hint of the spice. My kids and friends all raved about this and all requested i make another one.
Ingredients
1 stick butter (1/2 cup)
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 heaping teaspoon ground cardamon
3/4 cup sugar
3/4 cup packed light brown sugar
2 lg eggs, room temperature
1 1/2 teaspoons vanilla, DIVIDED
3 ripe bananas
1 1/4 cups buttermilk, room temperature, DIVIDED
1 1/2 cups powdered sugar
Flaky Sea Salt and Ground Cardamom for sprinkling
Directions
- Preheat oven to 350. Line a 9 inch round cake pan with parchment and spray with baking spray.
- In a bowl, whisk together the flour, baking powder, baking soda, salt and cardamom.
- Beat together 1 stick butter, 3/4 sugar, and 3/4 brown sugar in a bowl of a stand mixer fitted with paddle attachment on high speed until pale, about 3 minutes. Reduce speed to medium and mix in the 2 eggs, room temperature, and 1 teaspoon vanilla, then 3 ripe, peeled, flesh mashed, scraping down the sides.
- Reduce the speed medium-low, and add half the dry mixture then 1 cup the room temperature buttermilk. Using spatula, mix in remaining dry ingredients and making sure to scrape the bottom and that everything is well combined.
- Scrape the batter into prepared pan and smooth surface. Bake cake until golden brown, slightly puffed and a tester inserted comes out clean, about 50 minutes. Transfer to wire rack and allow to cool.
- Meanwhile, whisk 1 1/2 cups powdered sugar, pinch of kosher salt, remaining 1/4 cup room temperature buttermilk, and 1/2 teaspoon vanilla in a small bowl to combine.
- Turn cake onto a wire rack and turn right side up and pour the glaze over the cake. Sprinkle with flaky sea salt and cardamom.
