Banana Pumpkin Bread with White Chocolate Chips

minutesThis is soooo good. You can use any kind of chocolate chips. I just had some white chocolate chips left over and added them. You can add nuts or raisins. This is great and it made two loaves. My kids gobbled it up so it did not last long. My kids just ate it up but my daughter did toast it and added a touch of butter and she said it was incredible. It is perfect with a cup of tea or coffee.
Ingredients
2 ripe bananas
1 1/3 cup canned pumpkin puree
1/2 cup honey
1/2 cup brown sugar
1/3 cup vegetable oil
2 lg eggs
2 1/2 cups flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup chocolate chips
1/2 cups toasted pecans or walnuts, optional
Directions
- Preheat oven to 350. Grease two 9×5 loaf pans.
- Stir together with a lg fork, bananas, pumpkin, honey, brown sugar, vegetable oil, and eggs in a large bowl. Combine flour, pie spice, baking powder, baking soda, cinnamon, and salt in a separate bowl. Stir floor mixture into the banana mixture until just combined. Fold in chocolate chips and nuts.
- Bake for about 40-45 minutes, until a toothpick inserted into the center of the loaf comes out clean.
- Cool in loaf pan 10 minutes before removing to allow to cool completely on a rack.
