Binky’s Cucumber Salad

This is another favorite recipe. Binky would make this to go with the Chinese Chicken Salad or if she was preparing sushi or a stir fry. My grandmother loved Asian food. This salad is so refreshing. The flavors are tantalizing. This is always a go to on a very hot evening or afternoon.
Ingredients
2 large cucumbers
3 teaspoon kosher salt
1 cup water
2 Tablespoons Chinese Seasoned Vinegar
1 teaspoon sugar
1/4 teaspoon cayenne pepper
1 clove garlic, minced
1 spring onion, minced
3 teaspoons toasted sesame seeds
Directions
- Peel the cucumbers and slice very thin. Put in a bowl with the salt and water. Soak 15 minutes. Drain the liquid. Combine the other ingredients. Pour over the cucumbers and mix well. Cover with plastic wrap and refrigerate so that they are served cold. I make this in the morning and serve in the evening. Stir periodically through the day.
- Garnish with more sliced green onion and chives.
