Blueberry Banana Chocolate Chip Muffins

minutesI love these muffins. I had so many ripe bananas and was bored with making Mama Bread. I had some blueberries and an open bag of chocolate chips and I needed to use up some self rising flour. I made a dozen muffins and 2 loaves of bread. You could easily make about 2 1/2 dozen standard muffins. My kids and husband gobbled them up. They were very moist and so tasty with blueberries, bananas, and chocolate chips. Enjoy these. If you do make it in loaves, it will take long er to cooke around 50-55 minutes. I sprinkled some vanilla sugar on the tops.
Ingredients
2 cups self rising flour
2/3 cup brown sugar
1 heaping teaspoon cinnamon
1 large egg
3/4 cup milk
1/3 cup vegetable oil
3 mashed ripe bananas
1 heaping cup blueberries
1 cup chocolate chips, mini or regular size
3 Tablespoons vanilla sugar or cinnamon sugar for sprinkling before cooking
Directions
- Preheat oven to 350. Place 24 liners in 2, 12 muffin cup pans, lightly grease the liners with cooking spray.
- On a piece of was paper, combine dry ingredients. In a medium bowl whisk together the egg, milk, oil and mashed bananas. Add the flour mix to the liquid and combine well. Fold in the blueberries and chocolate chips.
- Spoon batter into prepared pans and sprinkle with seasoned sugar of choice and then bake until lightly golden about 20 minutes. A tester will come out clean.
- Allow to cool in pan for 10 minutes then remove and enjoy warm or allow to cool on a wire rack. I store these on the counter in an air tight container. My kids throw them into their lunch for school or enjoy as an after school treat.
