Blueberry Cinnamon Muffins

minutesThese muffins are so good. Plus, they make your house smell so good. I love the cinnamon with the blueberries. The flavor is like a warm hug. I make these often. Sometimes I sprinkle the top with homemade vanilla sugar and sometimes I make a mix of cinnamon, butter, flour and brown sugar and sprinkle it on top. These are so good heated up with a drizzle of raw honey. I have made these for brunch with friends and used a little creme friache that I added a little sugar and lemon zest to as a spread.
Ingredients
3/4 stick butter (6 Tablespoons) melted and cooled slightly
1 cup light brown sugar
1/2 cup whole milk
1 lg egg
1 1/2 cups flour
1 1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups blueberries
Directions
- Preheat oven to 350. Line a muffin pan with muffin cups
- Whisk together melted butter, brown sugar, milk, and egg in a bowl until combined well. Whisk together the flour, baking powder, salt and cinnamon in a lg bowl. Add the liquid mixture and stir with a wooden spoon until combined. Fold in blueberries.
- Spoon batter into muffin cups and sprinkle with sugar.
- Bake for 25-30 minutes until golden and a toothpick comes out clean. Allow to sit in pan for 8 minutes and then remove and cool completely or eat war, with a touch of honey.
