Blueberry Crumble Pie

minutesI made this up because I made my blueberry cobbler and had left over topping. The next day I went to our local bakery and bought a premade 6 inch pie shell. I used the extra berries I had and mixed them with a touch of sugar, lemon juice and zest and a teaspoon cornstarch. Place the berries in the shell and sprinkle with extra topping and bake. It is easy and delicious.
Ingredients
Extra cobbler topping: butter, oats, flour, brown sugar, cinnamon, and a pinch of salt
2 cups mixed berries
1 tablespoon lemon juice and zest
1 teaspoon cornstarch
3 tablespoons sugar
6 inch pre made (frozen) pie shell
Directions
- Preheat oven to 375. Place pie shell on baking sheet.
- Toss berries with ingredients and then add to pie shell. Sprinkle with leftover cobbler topping.
- Place in preheated oven for 20 minutes and then decrease temp to 350 for 10 minutes. If browning too much then cover lightly with foil. Berries should be bubbling.
