Cardamom Sugar Cookies

minutesThis recipe is wonderful. It took a few times to make it to get it right. I would make the dough the day before or morning before you cook them. It is great to bake before serving. These are perfect little cookies that go well with a cup of tea in the afternoon. They are not to sweet but so good with the hint of cardamom. Even my kids loved these. You can use other spices: cinnamon, pumpkin pie spice, nutmeg or and ginger. Make your own delicious sugar spice mixture.
Ingredients
2 1/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/2 cup unsalted butter, softened
3/4 cup sugar
1 lg egg, room temperature
2 1/2 teaspoons vanilla, divided
1/4 cup sanding sugar, colored works for holidays
1 1/2 teaspoons ground cardamom
1 1/4 cups powdered sugar
3 Tablespoons whole milk
2 Tablespoons cream cheese, softened
Directions
- Whisk the flour, baking powder, and salt in a medium bowl.Beat butter and sugar in a lg bowl with a hand mixer on medium speed until light and fluffy, 3 to 4 minutes. Add egg and 2 teaspoons vanilla, continue beating until everything is incorporated, about 1 minute. Reduce speed to low and add flour mixture, beat until dough comes together about 1 minute.
- Shape the dough into a smooth ball. Roll dough out on a floured surface. Roll out on floured parchment paper. Roll into a 14×10 inch rectangle. Stir together the sanding sugar and the cardamom in a small bowl. Sprinkle sugar mixture all over the dough. Working from the longer size of the rectangular, slowly and tightly roll dough into a log. Wrap in parchment or plastic wrap. Freeze until firm, about 30 minutes.
- Preheat oven to 350. Line 2 large baking sheets with parchment. Remove log from freezer, and unwrap. Using a sharp knife, slice the cookies in rounds, transfer to prepared baking sheets,
- Bake until lightly browned around the edges about 12 minutes. Let the cookies cool on baking sheets for 5 minutes. Transfer to a wire wrack and allow to cool.
- OPTIONAL: Beat powdered sugar, milk, cream cheese, and remaining 1/2 teaspoon vanilla. Drizzle the glaze over the cookies
