Chewy PB Marshmallow Bars

minutesI am not a fan of rice krispie treats but these were out of this world and the best part is they taste good the next day. They are so easy and yummy. They were a hit with my kids and their friends.
Ingredients
6 tablespoons salted butter
6 cups corn flakes
1 (12oz) bag of marshmallows
1/2 teaspoon kosher salt
1/2 cup creamy PB
4 oz semi sweet chocolate bar, chopped and melted
Directions
- Grease a 9x9x2 pan. Line with parchment so it overhangs (makes it easier to get out of pan) and grease that as well. Sprinkle 1/2 cup of the cereal over the bottom of the pan. Set Aside.
- In a heavy duty stock pot or pasta pot, melt the butter over medium low heat. Once melted add the marshmallows. Stirring so that they melt evenly, once halfway melted add in the peanut butter. Mix until everything is smooth.
- Remove the pan from the heat and add the remaining 5 1/2 cups of corn flakes and make sure to combine everything but don’t stir so hard that you crush the flakes. If mixture becomes too sticky, place over a low burner.
- Transfer mixture to prepared pan. You may need a wet spatula to press everything even in the pan, again don’t press to hard as you don’t want to crush the cereal on the bottom. If there is extra cereal, I took 1/2 cup and sprinkled it over the mixture in the pan and lightly pressed so it would stick.
- Melt the chocolate in the microwave in 30 second intervals at half the percentage of powder. Once melted drizzle all over the pan. Allow to set and cool then remove from pan and cut out 12 or 16 even bars. They can be stored on the counter in an air tight container for 4 days. I doubt they will last that long!!!
