Chicken Apple Sausages with Vegetables

minutesThis is a family favorite meal and one that is so easy to make. We love chicken apple sausages and they only take about 15 minutes to cook. The longest part of this is roasting the vegetables. I like to use what is in season, so because it is fall, I am using cauliflower, bell peppers, onions, and delicata squash. I like to serve this with crusty bread or polenta. Sometimes, it’s just vegetables and sausages with a big salad with crunchy greens like Romain and Radicchio. You can even cut up the sausages and serve them with homemade tomato sauce and pasta. Get creative but this is a go to meal when kids have after school activities and everybody is all over the place.It reheats well or the kids will make sausage sandwiches for school. You can always cut up the leftovers and make a hash with eggs. So many options.
Ingredients
2-3 packs of chicken apple sausages, choose your favorite variety
4 bell peppers, trimmed, seeded and sliced
Cauliflower, rinsed and cut up into florets
Red/yellow onions, skinned and sliced
Other options: green beans, asparagus, broccoli, carrots, zucchini, butternut squash
Polenta, rice, farro, or pasta
Olive oil
Salt and Fresh ground pepper
Favorite Seasoning for vegetables
Directions
- Preheat oven to Roast 375. Line 2 rimmed baking sheets with parchment paper.
- Remove the sausages from their packaging and either leave whole or cut up. I prefer to leave whole.
- Toss the cut up vegetables with olive oil and seasoning of choice. Place on prepared pan. Place vegetables in oven and once they begin to caramelize after about 20-25 minutes, add the sausages to the oven and cook both for 8-10 minutes.
- Serve hot with your favorite grain, couscous, polenta or rice.
