Cinco de Mayo Grilled Shrimp

minutesAnything on the grill is always better and eating outside is always my favorite. I love dining al fresco and thankfully where I live one can most of the year. Cinco de Mayo is a day I celebrate as it is the day after my anniversary. I love to celebrate it, as it is the day my husband and I left for Bora Bora for our honeymoon. I celebrate us. We always do something festive on the grill and make homemade margaritas. It makes for a fun afternoon. The kids now really enjoy it as well.
This seasoning works on anything but I tend to use seafood. It is very flavorful without being to hot for my kids.
Ingredients
1 Tablespoon olive oil
3 garlic cloves, minced
1/4-1/2 jalapeno, stemmed, seeded and minced
1 lime , zested and juiced
1/4 teaspoon red pepper flakes
1/4 teaspoon paprika
1/4 teaspoon ancho chile powder
Kosher salt
24 large wild shrimp, peeled and deveined
Avocado, cilantro, shredded cabbage, tortillas, and salsa
Directions
- In a bowl combine, oil, lime juice/zest, minced garlic, minced jalapeno, paprika, chili powder, red pepper flakes, and 1/4 teaspoon salt.
- Add the shrimp and marinate 15-60 minutes.
- Either on a skewer or in a bbq basket, toss the marinated shrimp on the grill. Once they are pink all over they are done.
- Serve hot with tortillas, cabbage, avocados cilantro and salsa.
