minutesThis has been a family favorite since my 14 year old was about to eat. I would make it for him and cut into tiny pieces and he still now gobbles it up. He and his sister beg me for it weekly if not daily. It is very good with sliced berries and syrup or powdered sugar. Do make this in a 10 inch Lodge Cast Iron Seasoned pan. It works so much better than a normal skillet. My 2 kids duct this off, so maybe it serves only 2.
Ingredients
3/4 milk
1/2 cup flour
2 large eggs
1/2 teaspoon vanilla
3 Tablespoons butter
powdered sugar and sliced berries for serving, optional
Directions
- Preheat the oven for at least 20 minutes to 450. Have a 10 inch cast iron pan ready.
- Whisk milk, flour, eggs, sugar, vanilla. Put the butter in the pan and place pan in oven until butter is melted. Take a silicon brush and brush the sides with the butter.
- Slowly pour in the batter to the hot pan, Bake 12 minutes. DO NOT OPEN OVEN WHILE DUCTH BABY COOKS UNTIL IT IS FINISHED.
- Remove from oven when puffed up and golden in color. Serve right away with syrup or powdered sugar.
