Earl Grey Yogurt Cake

minutesThis is so delicious and light. My kids love it in the afternoon or heated with a little sweet butter for breakfast. I bring this when stopping by a friends’ house to say hello or for a cup of tea. It is light, moist and can really be enjoyed at any moment in the day or even for a light dessert. I usually serve it with a light dusting of powered sugar. This is delicious anytime of the year.
Ingredients
1 cup vegetable oil
2 cups flour
1 teaspoon Kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 lg eggs
1 1/4 cups sugar
1 cup plain whole milk yogurt (sometimes I use vanilla yogurt)
3 tablespoons loose leaf Earl Grey Tea or 1/4 cup from tea bags
2 Teaspoons vanilla
1 Tablespoon raw sugar
Directions
- Preheat oven to 325. Spray a 9×5 loaf pan with non stick cookies spray and line with parchment.
- Whisk flour, salt, baking powder, baking soda, in a medium bowl to combine.
- Vigorously whisk 2 eggs and 1 1/4 sugar in a lg bowl for 1 minute. Mixture should be pale and frothy. Whisk in yogurt and the loose tea and vanilla.
- In a slow stream, add in vegetable oil, whisking constantly until incorporated. (Place a kitchen towel under your bowl to hold it study so you can use both hands for this task.) Add dry ingredients and whisk to combine. Scrape the batter into prepared pan and smooth the top. Gently tap against counter to remove excess air bubbles.
- Sprinkle with raw sugar and bake until a toothpick comes out clean after about ah hour. Every oven is different so check after 50 minutes.
- Let cool in pan for 15 minutes. Remove and serve warm with sweet butter and honey or toast with a little sweet butter.
