Family Mixed Grill Taco Night

minutesTaco’s are always easy and delicious. If we grill, it is fun to use meat, seafood and vegetables. But you can also use ground meat and sauté it in a pan. However you choose and whatever is your favorite spice mixture whether you make your own and buy a premade, it all works. Plus you can make a big meal by adding Spanish rice, black beans, guacamole and salsa. When we make these, there is never any talk at the table, the kids are happily stuffing their faces with good comfort food. Plus this is always a hit when kids have friends over. We also add chips, more chips, more guacamole and more toppings.
Ingredients
2lb flank steak or carne asada
1-2 lbs Ahi tune
1-2 lbs halibut/salmon/chicken
Vegetables to grill: zucchini, asparagus, peppers, onions,
Lemons/Limes/Oranges: split and grilled
Tortillas
Toppings: salsa, guacamole, cabbage, cheese, sour cream, cilantro, pumpkin seeds, sliced avocado
Directions
- Marinate the protein with your favorite spice mixture. In a pinch I use The Spice House: Adobe or fajitas seasoning. Sometime I will make my own: Lime Juice, salt, cilantro, chopped jalapeño, olive oil, and ancho chile pepper. Marinate it 1 hour to 4 hours. Red meat, pork and chicken can marinate overnight.
- Prep the topping and tortillas. I like to warm the tortillas.
- Light grill. Everything will cook rather fast, except the vegetables. Grill vegetables first, either move to the side or place in a warm oven till meat/fish is done.
- To serve: Platter the protein with the vegetables and lay out all the toppings with the tortillas.
