minutesI love fava beans. They are a bit of a pain to prepare but the process is worth it as they are so good. Once they are prepared you can make so many dishes with them from dips, to soups, to salads, and side dishes. I usually make them and toss them into a salad of some kind, either with crunchy or bitter leaves or/and farro or couscous.
Ingredients
2 -3 lbs Fava bean pods, if needing to feed a family of 4-6.
Olive oil
Seasoning of choice
Fresh herbs, chopped
Directions
- Get a medium size bowl and have a garbage can ready. Remove the beans from the pods, discard the pods and place the beans in the bowl.
- Bring a large pot of water to a boil, add the fava beans. Turn the heat down to medium and let simmer for 2 minutes.
- In a large bowl fill with ice water and when the fava beans are done simmering, using a slotted spoon remove the fava’s from the pot to the ice water to stop the cooking. Repeat with all the fava beans.
- Once they have cooled a bit, get another bowl. Have a garbage can ready, with each fava, being gently to not pulverize the bean, remove the outer bean casing. Toss the outer layer and place each green morsel in the bowl.
- At this point, they can be eaten or tossed into a salad. Or you can heat olive oil in a pan and saute the beans lightly. Serve with salt and chopped fresh herbs.
