Garden Surprise Side Dish

minutesI went out to my garden and after the crazy weather we have had, hot weather, rainy weather and muggy weather-my garden was at its end. So I picked what was left and cut it up and tossed it with fresh garlic and fresh herbs. I used a good olive oil and tossed it all together shoved it in the oven and had the best side dish after 45 minutes. You can use any vegetable that you want, make a good mix and toss with olive oil and garlic.
Ingredients
Eggplant, globe, Japanese or any variety, cubed
Tomatoes, various sizes, cut up
Summer squash, various varieties and size, cut up
Handful fresh herbs, torn apart
2-5 Cloves garlic, minced
Olive oil, 2-4 Tablespoons
Salt and Fresh ground pepper
Directions
- Preheat oven to 400, Toss all the ingredients in a bowl, and pour into an oven safe dish.
- Bake in the oven for about 45 minutes. You want the vegetables soft but with some golden brown color.
- Serve alone or as a side dish to any meat, poultry, or fish. Or add to a scramble, omelet or frittata.
- Enjoy warm or at room temperature. Toss with fresh herbs and favorite grain, add a touch more olive oil and some lemon juice and serve topped some greens.
