Glazed Ricotta Cookies

minutesThese cookies are delightful and light. You can use sprinkles if you want which would make them perfect for Valentine’s, Easter, Baby Showers, Bridal Showers or birthday parties. You can just glaze them and add some fresh citrus zest. These are so good. *****MAKE SURE TO MAKE THE DOUGH THE DAY BEFORE AND BAKE THE NEXT DAY!!!
Ingredients
1 1/4 cups flour
1/4 cup Bob’s Red Mill Semolina flour
1 teaspoon baking powder
1/2 teaspoon fine sea salt
1/4 teaspoon baking soda
6 Tablespoons salted butter, at room temperature
3/4 cup sugar
1 lg egg at room temperature
1 cup ricotta cheese
1 teaspoon vanilla
1/4 teaspoon Fiori di Sicilia
- Glaze
2 1/4 cups powdered sugar, sifted
1/2 teaspoon vanilla
2-3 Tablespoons +more in needed for desired consistency Whole Milk

Dough
- In a medium bowl, whisk together, flour, semolina, baking powder, salt, and baking soda.
- In a stand mixer with a paddle attachment, beat butter and sugar, until smooth 1-2 minutes.
- Add egg and mix well.Scrape sides of bowl, add the ricotta, vanilla, and Fiori di Sicilia, mix until combined.
- Add the dry ingredients and mix on low speed until everything is incorporated. Scrape bowl so that the dough is all mixed and in a cohesive spot. Cover with plastic wrap and place in the refrigerator for 2 hours to preferably overnight.
- Preheat oven to 350. Line 2 baking sheets with parchment paper and using 1 Tablespoon, scoop ut dough and drop it on prepared baking sheet. Finish with the remaining dough.
- Place in oven for 8 minutes then rearrange and cook another 6-7 minutes. Remove from oven and let sit to relax about 10 minutes. Remove the cookies to a wire wrack and allow to cool completely.
- While the cookies cook, Make the glaze. Place the powdered sugar in a bowl with butter, vanilla, and milk. Whisk well, the desired consistency should be like honey.
- Using a normal spoon, gently spoon glaze over each cookie. Sprinkle each cookie with cookie glitter, sprinkles or fresh citrus zest.
