minutesThese beans are so good, anyway you prepare them. I am a grilled vegetable fan, even grilled summer fruits are amazing. These I trim the stem and toss in a bowl with oil, salt, and pepper. I finish them off with a heavy squeeze of fresh lemon juice. I serve hot, right off the grill with fresh chopped herbs and a drizzle of good olive oil. Sprinkle with French finishing salt.
Ingredients
1 1/2 lbs beans, rinsed, ends trimmed
2 Tablespoons olive oil or avocado oil
Kosher salt and fresh ground pepper
1 lemon, cut in half, divided
Fresh herbs of choice-rough chopped
1-2 Tablespoons good quality olive oil
Directions
- Turn on the grill or light the fire. These beans are rather broad, so we cook them directly on the grill but if you prefer use a basket.
- Place the prepared beans on the grill with one of the half of lemon and allow to get a little brown then with tongs flip over, anywhere from 2-4 minutes per side.
- Remove beans once ready, toss with good olive oil, and few grinds of fresh pepper, sprinkling of finishing salt and the rough chopped fresh herbs.
- Serve hot or at room temperature. Also makes great leftovers.
