Hugo’s Avocado Toast

minutesSuch a simple breakfast but so healthy and good brain and body food. I make these for my kids all the time. When making them for friends or my husband, I like to change it up and use feta cheese with a red pepper oil and add in some greens such as arugula. Sometimes I like to add shaved radishes and sliced tomatoes. You can get as creative as you want. I even will add a slice of prosciutto over the avocado and then top with greens and poached eggs. A few shakes of some Aleppo pepper and you have a delicious breakfast. Using good bread is key, I like a good multi grain slice, toasted with a drizzle of olive oil or a smear of butter. Play with it. Get creative. You can’t go wrong.
Ingredients
Multigrain Bread: sliced
Avocado: ripe
Eggs: fried, scrambled or poached
Olive oil or salted butter
Red pepper oil
Aleppo pepper or red pepper flakes
Greens or herbs or both: arugula, spinach, baby kale with basil, thyme, or parsley
Cheeses: (optional) Feta, cheddar, provolone, Havarti, Munster
Meats: Prosciutto or a slice of your favorite deli meat
Finishing Salt: Maldon
Directions
- Toast the sliced bread, drizzle with olive oil or lightly butter then build your favorite toast.
- Spread with avocado then crumble with feta. Cover with favorite greens and top with eggs of choice.
- Drizzle with red pepper oil or sprinkle with pepper flakes.
- Finish with a dusting of Maldon Sea Salt
