Lemon Fig Cupcakes

minutesThese cup cakes celebrate two favorite things citrus and figs. I made these delightful cakes for my mother and father in law as they share my love of figs as well. I love figs as they can be savory or sweet and there are so many recipes you can use figs. These are beautiful, moist and wonderful. Sometimes I put a little fig preserves in the batter before topping with a dried or fresh fig. Both taste great. Sometimes I don’t add the frosting as they are pretty when they come out of the oven. I also sprinkle with some vanilla sugar or raw sugar if I know I will not be frosting them.
CupCakes
2 1/2 cups sifted flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 stick of butter
1 3/4 cups sugar
2 lg eggs
2 1/4 teaspoons vanilla
1 1/4 cups whole milk
1/2 cup freshly squeezed lemon juice
1/2 cup grated lemon zest
1/4 cup fig preserves, divided among the 24 cupcakes, optional
1/2 cup fresh or dried figs, trimmed and sliced
- Frosting
4 Tablespoons butter
4 cups powdered sugar
1/4 teaspoon vanilla
6 oz cream cheese
Directions
- Preheat oven to 350. Line 2 cupcake pans with muffin liners.
- Sift together the flour, baking powder, and salt. Set aside.
- In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add the eggs 1 at a time and beat in-between each addition. Combine vanilla and milk in a measuring cup.
- Add 1/3 of the flour mixture and beat in and then follow with the milk mixture, repeating until everything is incorporated.
- Add lemon juice and lemon zest, mix well.
- Scoop batter into pans and (if choosing, add a small spoonful of fig preserves to each before topping with a fig) top each cupcake with a sliced fig. Bake for 15-18 minutes until a toothpick comes out clean. Transfer to a wire rack and allow cupcakes to sit for 10 minutes then remove to cool completely.
- Frosting
- In a bowl, with an electric hand mixer, mix all the ingredients together until light and fluffy. Frost each cupcake with a thick layer of frosting and decorate with a sliced fig on top.
