minutesThese are so good. They are so light and perfectly savory. I made them on Super Bowl Sunday and they were gobbled up and enjoyed. They are light and lovely. Do place the bowl, cheese grater and rolling pin (mine stays in the freezer) in the freeze 30 minutes before making.
Ingredients
1 cup flour
1 1/4 cup cake flour
2 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 teaspoon sugar
2 teaspoons salt
7 Tablespoons COLD butter + 2 Tablespoon (melted for brushing tops)
3/4 cup cold buttermilk (you may need more for the dough to come together)
Flaky Salt such as Maldon or and a sprinkle of cayenne
Directions
- Preheat oven to 375. Line a rimmed baking sheet with parchment paper.
- In the chilled bowl, combine flours, baking powder, baking soda, sugar, and salt. Whisk to combine, make a well in the center. Using the chilled cheese grater, grate the butter into the bowl. Use a knife or a pastry brush to brush off the butter that sticks to the grater. Using my hands in gloves, I lightly tossed the butter into the flour. Replace bowl in the freezer for 5 minutes.
- Take bowl out of freezer, create a well in the center in the middle. Pour in the buttermilk and with a wooden spoon, gently mix well so everything is incorporated. You may need more buttermilk so add a Tablespoon at a time. You want the dough on the drier side not sticky and soggy. You do want it to come together. With your hands knead the dough until it comes together.
- On the counter or large rolling mat, sprinkle with flour and knead the dough. With your hands, flatten out the dough. Roll the dough out so that it is about 1/2 inch thick and using a 2 1/2 inch round or square biscuit cutter, cut out biscuits and place on prepared sheet, lightly touching one another. Melt the remaining 2 Tablespoons butter and using a pastry brush, brush tops with melted butter and sprinkle with salt or cayenne or nothing.
- Place in the oven and cook for 16-18 minutes. remove from the oven brush with leftover melted butter. Let Cool and serve warm.
