Liza’s Chicken Shawarma

minutesLiza Hinman has a restaurant near us called, Spinster Sisters. It is a wonderful restaurant with great food that you can taste and enjoy. Everything is cooked to perfection and done seasonally. Our local paper did an article on Liza and some of her favorite recipes. This is one they printed and as a lover of all Mediterranean and Middle Eastern cuisines, I had to make this for my family. I would even use the marinate on pork or whole roasted chicken. It would be great used on grilled meats. The flavors are amazing and my family loved it.
Ingredients
2 1/2 lbs boneless, skinless chicken thighs, about 8
Juice and zest of 2 lemons
1/3 cup olive oil
3 garlic cloves, chopped
2 teaspoons black pepper
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon ground cardamon
1 teaspoon paprika
1 teaspoon chili flakes
1/8 teaspoon cinnamon
1 Tablespoon Kosher salt
1 red onion, cut into 8ths
2 lemons, each chopped
Cilantro, fresh, chopped for garnish
Directions
- Mix together the lemon juice, zest, olive oil, garlic, pepper, cumin, coriander, cardamon, paprika, red pepper flakes, cinnamon and salt. Set a side.
- Line a rimmed baking sheet with 2 layers of parchment. Add the thighs, sliced onion, and chopped lemon. Rub the marinade all over everything and cook right away or even better, place in the refrigerator for a few hours.
- Preheat oven to roast 400. Once hot, place in oven for 50-60 minutes. Chicken should register 165 and the onions should have caramelized a bit.
- Serve with couscous and your favorite green vegetable. garnish with fresh chopped cilantro.
