Marmalade Date Tea Bread

minutesThis bread is very tasty and very good toasted. I chopped up the dates and placed in a bowl the night before with the hot tea.I made the bread in the morning. I made this for my Father in law who is an avid date fan. Every time they go to palm Springs, he must get a date shake. He loves this bread. It is super moist. I like it sliced and toasted with butter and more marmalade.
Ingredients
1 cup strong Earl Grey tea, cooled (2 tea bags steeped 4 minutes)
1 cup chopped dates
1 cup self rising flour
1/2 cup sugar
1 lg egg
3 Tablespoons orange marmalade
Directions
- In a small bowl, place the chopped dates. Pour over cooled tea and allow to come to room temperature, cover and refrigerate overnight.
- In a large bowl, mix together the flour, sugar, egg, and marmalade. Once mixed well, add the tea/date mixture and mix well to combine.
- Preheat oven to 350 and grease a 81/2 inch loaf pan. pour batter into pan and tap on the counter. Place in preheated oven for 45-50 minutes.
- Allow to cool in pan for 15 minutes, then remove from pan and allow to cool completely before slicing.
