One Pot Sausage, Peppers, Cipollinis, and Potatoes

minutesThis was so good, but I would redo this recipe. This is the way the recipe is done, but after doing the potatoes, I would do the same with the onions so they get some texture and cook well, then I would sauté the bell peppers then follow the recipe. This would allow for better taste.
Ingredients
2 Tablespoons olive oil
1 lb tiny new red potatoes, halved
1 (19oz) package of Italian sausage links
2 medium green peppers, cut into bite size pieces
2 medium red peppers, cut into bite size pieces
14oz cipollini onions, trimmed of outer skinned halved
1/2 cup dry white wine
1/2 cup chicken broth
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
Fresh basil leaves
Directions
- Heat 1 Tablespoon oil in a Dutch oven over medium heat. Add the potatoes cut side down and cook until browned about 5 minutes. Transfer potatoes to a lg bowl. Add Remaining Tablespoon oil and add sausages. cook turning halfway through until browned. Transfer to a cutting board and cut into 1 inch pieces. Add to the bowl with potatoes.
- Add the peppers, onions, wine and broth to Dutch oven. Using a wooden spatula, scrape up any brown bits.
- Return potatoes and sausages to pot. Season with Italian Seasoning, salt and pepper. Brint to a boil. Reduce heat to low and simmer covered until vegetables are tender about 10-15 minutes.
