Pizza Oven Dough

minutesWe have an outdoor pizza oven so we have family pizza parties often. I make all the ingredients: roast the vegetables, procure good cheeses: parmesan, mozzarella, fontina, and pecorino. As far as meats: salami, prosciutto and ham. I have tried many recipes but find this one the best and easiest. Have all your ingredients ready so that toy can knock these pizzas out. They cook quickly in a pizza oven. The best recipe comes from Mugnaini.
Ingredients
1 1/2 cups warm water, divided
1 package or 2 oz teaspoon active dry yeast
4 cups 00 pizza flour
1 teaspoon salt
1 teaspoon olive oil
1 Tablespoon dried herbs or Penzeys Tuscan Sunset
Brown rice flour
Directions
- Place warm water in a small bowl and sprinkle with yeast. Let sit for 5 minutes until it gets foamy.
- In a stand mixer, place flour, salt and yeast mixture and remaining water fitted with the paddle attachment. Mix for 2 minutes. As the dough comes together replace with a dough hook. If the dough is too wet add a little more flour, 1 Tablespoon at a time. Drizzle with oil/dried herbs and mix for 2 minutes. The dough should come together in a ball. Turn the mixer off and cover and let sit for 20 minutes. Resume mixing again on low speed for 3 minutes until the dough becomes a smooth ball. Place the dough in a lightly oiled bowl and cover and place somewhere warm so the dough can double in size about 2 1/2 hours. After the dough rises, the dough can be cut into 4-5 balls. Dough can be used immediately.
- Knead each dough ball and roll out on a lightly floured surface. On the pizza peal, sprinkle the brown rice flour and prepare your pizza to be cooked.
- Into the hot pizza oven and within a couple minutes the pizza should be hot and ready to enjoy.
