Quick Cherry Tomato Pasta with burrata

minutesI love the simplicity of this pasta as it tastes like summer. Fresh herbs, summer tomatoes and pasta with cheese to top it off. My family loves this. I always tweak it with whatever is fresh from my garden. Sometimes, I’ll make a simple pesto to go with it.
Ingredients
4 cloves garlic, sliced thin
4 large sprigs basil, remove leaves from stem, chopped
1/4 cup olive oil
3 pints cherry tomatoes
Kosher salt and fresh ground pepper
Red pepper flakes
8oz burrata cheese
Directions
- Bring a large pot of water to boil. Salt the water then add the pasta and follow cooking instructions.
- In a lg saute pan, heat the olive oil over medium heat until shimmering. Add the garlic, tomatoes, 1 1/4 teaspoon salt and 1/2 teaspoon red pepper flakes. Cook, stirring occasionally, until the tomatoes burst and start to release their juices, 5-7 minutes. Remove from heat.
- Add 1/2 cup of pasta water to the pan with the tomatoes and bring to a simmer over med high heat. Add the pasta and toss till the sauce coats the pasta about 1 minutes.
- Remove from the heat and pour into a serving bowl, add the basil and season with salt and fresh ground pepper. Tear the burrata and place around serving dish with a drizzle of olive oil.
