Roasted Duck legs with Apples and Onions

minutesThis recipe is so good and I simplified how they wanted it done. I made it for my family and dear friends who came for dinner. I served it with roasted fingerlings and shallots as well as green beans with some lemon zest and sliced toasted almonds. It was a hit and everyone raved.
Ingredients
4-6 large duck legs, thigh attached
3 tablespoon olive oil
Kosher salt
1/2 teaspoon freshly ground caraway seeds
2 small onions, peeled, and halved and quartered
6 Tablespoons butter
3 honey crisp apples, peeled cored and quartered
1 bunch fresh sage leaves
Directions
- Preheat oven. Place the duck legs in a large enough roasted pan to fit. Add the onions and tuck sage leaves throughout. Save some to chop for garnish. Drizzle lightly with oil. Season ducks with salt and ground caraway seeds. Place in the oven and cook for 30 minutes. Continue to check on the ducks and if they are rendering lots of fat, you can use a spoon or turkey baster to remove some.
- In a large saucepan, melt the butter and add the apples, cut side up, do not touch for 5 minutes until they brown on the bottom. Transfer to oven and cook for 30 minutes until they are tender and golden brown.
