Rustic Apple Galette

minutesI love making these as they are less labor intensive than a pie. These are easy to make and very good. They are so good one can enjoy for both dessert or breakfast. It is very light and if you have sweet apples, you don’t need a lot of sugar. Really you can make this using any fruit or berry.
Ingredients
Crust of choice ( for speediness I pick up frozen dough at my local bakery)
1 3/4 lb Granny Smith apples, cored, peeled and cut into 1/8 inch slices
2 Tablespoons sugar
2 Tablespoons brown sugar
1 Teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon vanilla- you can use lemon juice instead
Pinch of salt
1 Tablespoon flour, more for rolling out
2 Tablespoons butter, cut into pieces, placed around the apples
1 tablespoon vanilla sugar or turbinado sugar
1 egg, beaten well mixed with 1 teaspoon water
Directions
- Preheat oven to 400. Prepare a rimless baking sheet with a piece of parchment and set aside. Roll out the dough to about 12/13 inches in diameter. Place on prepared sheet and place in the refrigerator.
- Place all the sliced apples in a bowl and toss with both sugars, vanilla and pinch of salt. Toss well.
- Remove dough from refrigerator and sprinkle the flour on the bottom of the dough and rub it in lightly. Pour the apples on top of the flour and even out a bit leaving an inch or two from the edge and take the edge of the dough and tuck it up and around the apples about an inch or a little more.
- Using the egg wash, brush the dough so that it acts as glue and keeps the dough together, pinched together. Places the pieces of butter around the apples and sprinkle with vanilla sugar and a touch more cinnamon.
- Place in the oven and cook for 15 minutes, then reduce the heat to 375. for 50-60 minutes.
- Let galette rest on pan for 15 minutes then move it to a rack and let cool for 20 minutes. Serve with vanilla ice cream.
- This is better eaten the day it is made but it does hold up well. Keep on the counter air tight for up to 3 days.
